If you love pizza, and queso, you’re going to love this recipe. Start your day off right with a delicious Chorizo and Queso Tex-Mex Breakfast Pizza.

Ingredients
1/2 cup Jaime’s Spanish Village Chile con Queso
1 Pizza crust with slightly raised sides
4 oz. Mexican style chorizo
3 eggs
1/4 cup chopped red pepper
1/4 cup chopped green onion
1/2 tsp salt, or to taste
1/2 tsp pepper, or to taste

Preheat the oven to 400 degree.

Directions
Remove the chorizo casing. Brown chorizo in a medium sauté pan over medium heat stirring frequently till dark brown in color. Remove excess fat with a paper towel. Move all of the meat to the top of pan and hold in place with spatula. Tilt the pan towards you slightly, and when the grease falls down, collecting in a pool at the bottom of the pan, slowly lower pan. Mop up the grease with a paper towel held by tongs. Discard the grease.

Place the pizza crust onto a baking pan or cookie sheet. Melt the Jaime’s Chile con Queso in the microwave until runny, but not smoking hot. Crack the 3 eggs into a bowl and add salt and pepper. Sprinkle the red pepper, chorizo, and green onion evenly over the pizza crust. Pour the egg mixture into the pizza crust, using a spoon to distribute evenly. Don’t add all of the egg mixture if it looks like it will overflow. Pour the melted cheese in a thin stream over the pizza in a circular swirling motion, starting at the outer edges and slowly working your way to the enter. Bake the pizza for 10 minutes, or until the egg is set. Serve with Jaime’s Spanish Village Red HOT Salsa!
